We’re all aware that I am super ‘in’ to amazingly easy recipes, yes? If you’re not, consider yourself informed. Ain’t no one got time for that, is the understatement of the year for me. By the time I get off of work, drive home [which is usually a 45min + commute], pick up kids from two separate locations, and finally get home? There is no time for crazy intricate recipes and dinner aspirations are minimal, at best.
So, I was super excited to find this lemon-garlic chicken recipe on Pinterest.
Let me just cut to the chase [because I know that's what y'all care about]: this recipe is pretty damn amazing. It’s easy, quick, and uses REAL ingredients … which let’s face it, is a winning combination. You can follow the recipe from the original source, or … you can check out mine below, as I altered mine slightly.
4 boneless chicken thighs
4 chicken drumsticks
10(ish) cloves of garlic
salt & pepper
2 tablespoons fresh thyme
2 tablespoons fresh rosemary
Preheat oven to 375 degrees F.
Lay chicken pieces across bottom of casserole dish. Squeeze in juice from lemons, add in the rinds throughout. Add garlic cloves, thyme and rosemary [and honestly, you don't have to measure out 2 tbs of each, just sprinkle throughout]. Salt & pepper to taste … and I would be generous with your salt – it works well with the lemon flavor.
Bake for 45 – 60 minutes, basting chicken every 10 minutes.
The original recipe calls for only 30 – 40 minutes, which was not right at all … at least not in my oven. This is why I don’t have a ‘end product photo’ … because my kids were so starving by the time dinner was done, they practically attacked me and knocked the dish out of my hands.
Okay, maybe not – but they were starving we basically devoured our dinners. It was delish! This recipe will definitely get added to repertoire, SUPER easy – I actually threw everything into the dish the night before, so that once I got home the next evening, I could just pop the whole thing into the oven as soon as I walked through the door. Based on the comments from the original post as well, you could totally throw in some potatoes and/or veggies as well.
