I’m a working mom. A working mom with 2 kids. A working mom with 2 kids and a husband who works crazy retail hours. To be frank, when husband works late … my evenings are INSANE and my time is PRECIOUS.
And lawd help me if one of these nights he works late also happens to coincide with bath night. ::headdesk::
So I get off of work at 5pm. I pick up the Mouse from preschool. I pick up the Froggy from family. Usually, it’s close to 6pm by the time I get home. At this point, I need get a TV show on for the Mouse, start dinner, and feed the Froggy his solid dinner all at the same time. No really, ALL AT THE SAME TIME. If I’m lucky, I can click on to Dora, throw something on the stove, and then sit down and crack open some pureed peaches for the Froggy without anyone starting to cry. Again, if I’m lucky.
My point is … on nights when the husband is working, WHAT we have for dinner comes second to HOW EASY it is for me to get it made. In a perfect world, I would have sat down last Sunday afternoon, made a detailed meal plan for this crazy night, gone shopping for the ingredients with my awesome coupon binder, and maybe even have thrown a casserole together and into the freezer to be shoved into the over now.
Let me tell you how many times that’s actually happened: Oh wait, NEVER.
It needs to start happening like that though. I NEED to start actually cooking and not being satisfied with slapping a microwaved hotdog down in front of my kid … and then eating popcorn for dinner myself at 830pm once both kiddos are in bed. We DO eat normally on nights when the husband is home and we can tag-team the kids/responsibilities … but there are still usually 3 nights of the week when he’s not home, and I totally slack off.
SO. That all being said, I need some help coming up with EASY recipes I can either a) throw into creation REALLY quickly in the evenings when I get home or b) make ahead of time to be eaten on crazy nights when I can’t/don’t have time to cook.
Where does one go when they’re looking for good ideas? PINTEREST of course!
