Sunday was a frustrating day in the Tottums household. The freezer went out, the baby was crazy fussy, the toddler was difficult … by Sunday evening, I was about ready to tear my hair out.
Monday afternoon I had to leave work early to meet the refrigerator repairman at home. While he was working on the freezer, I had time to get some chores around the house done, catch up on some DVR, and actually get a REAL dinner together. Which means I finally got to try this Pinterest recipe I’ve been dying to make!
Zucchini chips!

I am a fan of anything that involves any type of squash … and this sounded DELISH. Even better? SO super easy. This is how it works:
- preheat oven to 425*
- slice zucchini
- coat in milk
- coat in mixture of bread crumbs, Parmesan cheese, garlic powder and pepper.
- place on greased baking sheet
- Cook for 30 min.
AH-MAY-ZING.

Seriously though, days like this when I for some reason go home early while J is still at daycare and husband is at work are the best! Somehow I manage to get all kinds of chores done AND watch some TV! It’s basically a win for everyone!

Ok, so I made these tonight and I just followed what you had here on your site. I wasn’t horribly impressed and I love love love zucchini. After dinner I looked at the link through Pinterest and maybe if I would have added the season salt and used the cooking spray they would have been a little more crisp and so much wouldn’t have stuck to the pan. Must try again.
